12 Days of Christmas Cookies!

Day 2

Linzer Jamwich Cookies, my absolute favorite of all time, and they’re egg and nut free!

For the Cookies

  • 2 1/2 cup AP flour

  • 3/4 cup sugar

  • 1/4 teaspoon salt

  • 1 cup butter, softened

  • 2 tablespoons cream cheese, softened

  • 2 teaspoons vanilla

  • jam (jam, jelly, curd, marmalade, or whatever jammy stuff you want!)

  • powdered sugar

Directions

  1. Preheat oven to 325F

  2. mix flour, sugar, and salt

  3. in another bowl with a hand mixer beat together butter, cream cheese and vanilla

  4. slowly add dry mix to the butter cream cheese, mix until fully combined

  5. wrap dough in plastic wrap and let rest for 20 minutes in the fridge

  6. roll out to 1/4in and cut dough with cookie cutters, take a smaller cookie cutter and cut out windows into half the cookies

  7. bake for 6-8 minutes at 325F rotating if needed, don’t let them get too brown!

  8. once completely cooled take the cookies without the cutouts and add 1/2t of jam, jelly or curd onto the middle of the cookie

  9. add the cookies with cutouts on top of the cookies with jam

  10. sprinkle with powdered sugar

    ***Bonus tip!

    I bake my little cutouts as mini cookies, for 4-5 minutes, perfect for decorating pies and cakes or just eating as a snack while waiting for the cookies to cool!
